Food & Music 4: recipes

As I mentioned, I was a bit knackered, exhausted tonight, so postponed the big supper til another night this week. Here are my "recipes".



 

1) Quick flavorful black-eyed peas. As I was tired, this version, with barely a handful of ingredients, is what I did. Three handfuls of black-eyed peas into a heavy-bottomed pot, sprinkle with salt, a few dashes of tabasco, a little pepper, and half a large onion minced roughly. Top this up with water til the water covers everything by 2 inches. Leave in fridge overnight, to soak. Next day boil all this for 2 hours til beans are soft, stir every once in a while to make sure the beans are not sticking to the bottom of the pot.

Serve hot with the pot liquor, over a slice of the buttered cornbread.

2) My usual version of the above, includes the same method, but first putting a few ham hocks or lamb on the bone, into the bottom of the pot. Additionally, adding minced celery stalks and leaves, fresh herbs whatever you have (I like sage, oregano, thyme, cilantro), a bit of finely minced carrot and green bell pepper. Sometimes adding a few dried black beans, navy, pinto or northern too. It´s soup, so it´s all good.
