Sunday: kanelknuter recipe for fika (add pics)

Sunday Fika, twisted cinnamon and cardamom breads. You can use any cinnamon roll recipe you like, then just cut strips and twist into twisty rolls, brush with egg wash and sprinkle with spices and large pearl sugar before baking. Serve with coffee. For Sunday, I had this, coffee and smørgås, open faced sarnies, I made for our  family brunch. See other weekend post previous to this, for smørgås photos. Fika, is coffee and cake break, but for Sunday brunch I also served it with the smørgås, which is still Fika, but I call it Smørgås and Fika. Fika is also a verb: to have a break of coffee and cake/pastry. Fika can also mean to drink coffee, alone (just coffee).

Recipe for kanelknuter (sorry I wrote it out for me. I´ve barely translated it loosely for anyone else wanting to try it. But really you can use any cinnamon or cinnabon recipe, just twist strips into the twisy buns before baking. Jeg mener i alle fall jeg har fått oppskriften på beste i varden for kanelknuter. I dag bakte jeg knuter min med kanel og mange kardemomme. yd ca. tretti boller med stor sukker.

Ingredienser:
(Fyll: smør smeltet, sukker, kardemomme, kanel, etc melk, egg, perlesukker. Eller vaniljekrem, eller noe annet om du heller vil du ha det i kjokken/skap)

melk, 6 dl
hvetemel/mixed 16.5 dl, mer hvis
sukker, Tate & Lyle, 2 dl
salt 1 ts
kardemomme 1 TBS
gjær, rød, 50 g
egg, 1 eller 2
smør, 150 g

Første frem alle sett ut til råvarene, de skal nemlig være romtemp. Skjær smøret i terninger men det forsatt er kaldt, ikke mye mer.

Set out everything, til room temp, keep butter cold, cut into cubes. (Cubed butter, 2 eggs, fresh yeast, sugar, spices, flours, milk, salt.

Sett tilside 1 dl av de lunkene melken og alt smøret til senere.

Set aside 1 dl of the lukewarm milk and a bit of the butter til later.

Varm melken til 37C og rør ut gjæren. Deretter tilsetter du resten av ingrediensene. Kjør deigen i kjøkkenmaskin i 3 minutter på sakte fart, øk deretter hastigheten. Krør deigen i 5 minutter.

Loosely translated. Warm milk to about body temp, not too hot. Add yeast, stir. I add a TBS or so of flour. Let set til frothy bubbly, is ready to use, finish. I mix by hand, but you can use a mixer or bread machine.

Tilsette den siste dl melk litt etter i små mengder. Deigen blir nå smidig og får en blank overflate. Deretter tilsettes smøret som er skåret i terninger. Kjør deigen på sakte til smøret er blandet helt inn i deigen. Dersom deigen er veldig seig anbefaler jeg å tilsette mer mel, 2-3 dl ekstra. La deigen hvile i ca en time...etc...

I en kasserolle, smelte smør med sukker, salt, kyrdder. Rør til sukkeret er oppløst, ta av plata og rør i melken. Blandingen skal være fingervarm.

loosely translated. Make like any cinnamon roll or bread recipe.
In a pot on the stove, heat to melt butter etc. Add butter, sugar, salt, spices til butter  and sugar is melted. Mix, take off hotplate, pour in milk. Mix and let cool til body temp (not hot to the touch). etc. Eggs into flour, liquid into that, etc.

I mix by hand with wooden spoon, etc adding more flour etc as needed. Let rise 1hour. Make the filling, roll out the dough, as any cinnamon roll recipe, fill, fold lengthwise into thirds (one side over to middle, other side over to middle). Then slice width-wise, little bit by little bit. Twist and roll each little bit into a roll, using 3-4 little bits. Let rise, brush w egg, sprinkle with spice and pearl sugar. Back 230C 10-15 minutes.

Variation on cuts and twists:

When cutting width-wise, cut "pants" almost two strips but not all the way to the end. Twist each "leg" of the "pants". Then twist each pair of twisted "pants" into one knuter.

Or cut into long strips, widthwise. Twist strips into long twisted strips, then twist that into a ball. Can put into a cupcake paper, then bake as usual after coating with melted butter or egg wash and sprinkling with spices and pearl sugar.

Server mens de er varme! eller kaldt hvis. Kjempedeilig ved kaffe au lait for fika!:)
