Kanelknuter/snurer & skillingsboller (add pics)

midnight. Just finished the dough, letting it rise overnight. Making filling to use in the morning. In the morning finish then bake (20 minutes).

1) Dough. Make one dough. Divide into two pieces. Make one basic filling, divide into two spread half onto each dough in the morning (instructions to follow). On the skillingsboller, then also sprinkle with raisins and pecans (traditional is almond slivers, but I like pecans).

With fresh yeast just put all the ingredients in bowl, except butter, mix. Then mix in the butter, in one piece, knead with a little extra flour til butter is kneaded into the dough. Add a bit more flour til the dough is kneaded where your hands come clean, and the dough is not sticky but a bit glossy. Cover with a damp tea towel. Let rise in bowl overnight. Finish by diving in two equal pieces, roll out into rectangles. Spread each with half the filling, sprinkle second with the pecans and raisins.

Fold each rectangle into thirds, top to middle and bottom to middle. Slice each into ribbons, widthwise.

For skillingsboller, roll into coils, put on prepared baking tray, let rise one hour. Brush with eggwash, sprinkle with demerara sugar. Bake 20 minutes preheated oven.

For kanelknuter/snurer twist ribbons towards you, wrap 2 times around hand, tucking end into the middle, making a knot. Put knot side down on tray, finish as above.

IN THE MORNING:

Preheat the oven_____C. Uncover dough, divide into half, then half. One fourth is enough for one tray. I´m making one tray this morning, of both min kanelknuter and mini skillingsboller.

Sprinkle counter, rolling pin and one piece of the dough lightly with flour. Roll out thin into a rectangle, spread with butter. Sprinkle a little with chopped pecans and raisins (dried figs work well too). Fold each side of the long side of the rectangle towards the middle. Roll out a little more. Slice width wise into strips. Twist each strip then make into a knot, or cinnamon roll shape. Put on tray. Rise, brush w eggwash and demerara sugar, bake.
