Sunrise is now about 6am, with sunset nearly 9.40 pm. Currently, the sun is shining brightly onto my computer screen, at 8.40 am. I´ve been up since about 6am just studying and enjoying the beautiful day! The dark of winter is cozy and comforting like a warm blanket wrapped around, but the bright long sunny days of this time of the year is also wonderful, and makes one want to be outside and awake to enjoy all of it! Every day the day is a bit longer than the previous, until there is no dark...then slowly once again it reverses each day having less daylight until there is mostly only dark.
This morning, well today, my schedule includes OAMC (Once a Month Cooking). Yesterday was my shopping day for this, and now I´ve got all the ingredients, and as my freezer is nearly emptied, I´ll cook several things to freeze in family-sized portions, so that all I need do is thaw out suppers the night before. Most meals I cook from scratch so this helps save time, to give me more time to spend with family. Today I´ll be making Thai curry, Indian curry, spicy spaghetti sauce with meatballs (above), Texas chili, beef stroganoff, chicken paprika with German dumplings, sour cream chicken enchiladas, ancho beef/pork tamales. Oh, and an okra gumbo! ¨Today¨ might stretch into a few days this week, as it takes some time and I´m usually busy. Still this saves lots of time for meals in the long run!
Yesterday, some of ingredients I got at the Sunday grocery included curry leaves, lemongrass, black fennel seeds, fresh herbs, okra, fenugreek seeds...
MMMMM the kitchen smells wonderful!
